WATCH OUT, ICE CREAM... HERE COMES VICE CREAM!

There's really not much reason to bad mouth ice cream... It IS one of the great great food inventions... and extremely popular. The concern today with ice cream is that it's loaded with fat and sugar. But, in a very successful formula.

But now... I have the answer for you! VICE CREAM!

The formula is so simple, it's incredible! Just two ingredients having an equal reaction on each other simultaneously! And, all you need is a food processor... not a blender... a food processor... you know... the machine with the curved double blades.

O.K., let's go ahead and make some right now!!

1. In your food processor put about 4-5 cups of Frozen Blueberries... Frozen being the key word here. The berries must be Frozen. (You might also like to add a tablespoon of Blueberry jam or preserves just to add a bit of sweetness)

2. Pour in about 3/4 cup of Half and Half

3. Turn the food processor on with one hand pressing down on the cover to keep a good seal all around so that the berries don't cause the liquid to seep out.

4. Blend for just about 10 seconds at a time... check to see the consistency. If you think it's too thick, add just a bit more half and half. I say a small bit because we don't want to turn it into a smoothie... we want it ice cream-like.

This whole process takes about a minute. That's not a long time to end up with this 'kinda like ice cream' thing.

The magic is... that the frozen fruit is what makes it so much like ice cream.

You can do this with frozen strawberries or frozen peaches... or frozen whatever you like (and, don't forget the matching jam or preserves).

This is the answer to having an ice cream treat that is not fattening.

Note: The amount of half and half is not a problem After all... with the four cups of berries and only a half to 3/4 cup of half and half... each of the four or so servings will have just a small amount.

I named it Vice Cream because my name is Vincent (kinda vein, huh?).... but, Vice Cream is a great name for it anyway. There are those of you who will inevitably compare Vice Cream with Ice Cream... but, not to worry... Vice Cream will make you happy and healthier, too!
