3 Delicious and Unusual New Ways to Eat Superfood Avocado

If you are an avocado fanatic like I am, you're probably already well aware that they're a great base ingreident in recipes beyond an amazing guacamole. You may have even enjoyed sneaking some avocado into your smoothie, blended it into a luscious chocolate pudding or even tried avocado-based ice cream. But I bet you (probably) haven't had an avocado risotto, creme brulee or crispy avocado fries -- all of which are totally and utterly delicious. Think outside the bowl (and the pit) with these swag new ideas.

* Avocado Risotto: A classic creamy dish, risotto is made even better when you add some avo. Not only does the mild avocado flavor pair perfectly with the herbs and other ingredients in this recipe but it also lightens-up the traditional version since the risotto's creaminess is coming from the heart healthy fats in the avocado, rather than the usual saturated fats from cream and butter.

* Avocado Creme Burlee: Although we had never heard of incorporating avocado into this decadent dessert, it does make plenty of sense because of avocado's naturally creamy texture. This recipe takes avocado and blends it with cream, sugar and a touch of lime juice -- no baking (thus, cooking) required! For a fun touch, serve it up in the avocado skin with some caramelized sugar in the middle to resemble the pit of an avo.

* Avocado Fries: Firm, but ripe avocado slices are rolled in panko bread crumbs and lightly pan-fried in olive oil to yield a one-of-a-kind fry that is crispy on the outside and creamy on the inside. Served up with a nonfat sweet-and-spicy yogurt dip, it will be a hit at any party.
