Churros with Dulce De Leche Filling

Churros are a delicious, must try snack that melts in your mouth; they're pillows of fried dough that you can either cover in cinnamon sugar or dip in your favorite filling. In this case, we're combining the filling inside the churro.
Yields: About a dozen pieces

Ingredients:
1 cup water
3.5 oz. (100 grams) butter
1 cup all purpose flour
2 eggs
Pinch of salt
1 cup dulce de leche
Sugar, to coat churros
Vegetable oil, enough to fry

Preparation:
Put water, salt and butter in a saucepan and bring to a boil; once the mix is boiling, add the flour all at once and stir well until the dough comes away easily from the sides of the pan. Remove from heat, and add both eggs, one at a time, until well combined.
Place dough in a pastry bag with a mid-sized star tip.
Heat the oil in a clean pot; once it's ready, squeeze the pastry bag and carefully drop strips of dough into the oil, cutting it with a knife to release from the bag. Fry until golden brown on all sides.
Place fried dough on a paper towel to absorb excess oil, and roll around in sugar.
Once you've made the churros, proceed to fill them with dulce de leche.
To do that, place dulce de leche in a pastry bag with a plain narrow tip, put the tip inside each end of the churros and squeeze until they're filled.
