Lemon Curd
Ingredients: 1/2 cup lemon juice, Zest of one lemon, 3 large eggs, 1/2 cup sugar and 6 Tablespoons butter, melted
Directions: In a blender, combine the lemon juice, lemon zest, eggs,and sugar. Blend until well combined, about 15 seconds. With the machine running, drizzle in the melted butter. Pour the mixture into a saucepan and bring to a boil over medium heat, stirring frequently. When it reaches a boil, reduce heat to low and stir constantly until the mixture resembles pudding (it should coat the back of your spatula/spoon). This will take two or three minutes. Pour into a bowl or jar and let cool for a few minutes before serving.
