Quesadilla Nacho Party Bites They're mini quesadillas! They're nachos! They're quesadilla-nacho party bites! All your mexican food dreams come true in one tiny bite. Ingredients Tortillas (I like white corn) Shredded cheddar and jack cheese Guacamole (homemade or buy a container) A can of sliced olives, quartered Grape tomatoes Sour cream Directions Place one tortilla on a flat-bottom pan, cover with cheese, top with another tortilla and heat until just beginning to melt, then flip and heat until melted. 2. Remove and let cool for a couple minutes. Use a pizza cutter to slice into bite-size pieces. 3. Place a dollop of guacamole and sour cream on top, then add one piece of tomato and olive. Optional: Jalapeño, beans, cilantro, shredded chicken cooked inside the quesadilla would be excellent too.
