Tomato Gazpacho with Chicken
Gazpacho, a cold Spanish soup, makes an appealing choice as the weather warms.
1. In batches, in a blender, puree 2 1/2 pound quartered tomatoes, 1 small stale piece of bread with the crusts removed (about 1/4 cup), and 4 tablespoons olive oil. Add 1/2 chopped English cucumber, 1 seeded serrano chile, 1 clove garlic, and 1 to 2 tablespoons sherry vinegar to taste; blend until smooth. Season with salt and pepper. Transfer to an airtight container and refrigerate at least 4 hours (or up to 2 days).
2. Divide soup among four bowls, top with cooked chicken breast, drizzle with olive oil, and serve.
