The Feast of Candelaria, celebrated every February 2nd throughout Mexico and Latin America, is a religious tradition that actually gets started as early as Christmas Day with the setting of the Nativity scene, followed by the Three Kings Day celebration on January 6th. On that day, families prepare their customary "Rosca de Reyes", a sweet bread that contains a tiny doll or two inside. Those who get the little doll in their slice of "rosca" become the padrinos or honorary godparents of Baby Jesus, and are expected to bring tamales to the February 2nd celebrations. Here's a festive tamal option that adds sweetness to the Candelaria table.
BERRY TAMALES (Serves: 10-12) Ingredients: ½ lb. butter 7 egg yolks 1 can condensed milk 3 cups rice flour 1 tbsp baking powder 1 cup sugar ¼ cup cream cheese, sliced 1 cup blackberries ½ cup blueberries 10-12 hojas para tamales (tamal corn husks available at all Latin markets)
