Mini Peanut Butter Cup Brownies
Ingredients: 1/2 cup butter or 1 stick softened 1/4 cup plus 2 tablespoons of vanilla yogurt 1 1/2 cups sugar 1 teaspoon vanilla 3 eggs 3/4 cup cocoa 1/2 cup all purpose flour 1/2 cup whole wheat flour (or 1/4 cup almond meal and 1/4 cup whole wheat flour) 1/2 teaspoon baking powder 1/4 teaspoon salt container of mini peanut butter cups Directions: Preheat oven to 350. Grease 8 ramekins. Mix butter, yogurt and sugar. Add vanilla and egg. In a separate bowl mix dry ingredients and slowly pour into the mixer to form batter. Remove the beater and stir in mini peanut butter cups. Pour into each ramekin halfway and place a few mini peanut butter cups on top. Bake for 15 to 20 minutes or until top bounces back. Serves 8 or 12.
