Quick and healthy meals made with tortillas

The new year has arrived and it's time to start thinking about eating healthier meals. While you could grab a TV dinner, why not eat something fresh? One ingredient I love to use is tortillas. Tortillas are not only used for high-fat Mexican food, they can also be used to make healthy meals. Whether it's a tasty wrap or a quick tostada, there are several things you can do with tortillas. Here are just a few quick and healthy meals made with tortillas.

Egg and Veggie Burrito

If you're looking for a quick breakfast, start by sauteing chopped onions, peppers and mushrooms in olive oil until cooked through. Once cooked, set the vegetables aside and cook a serving of Egg Beaters. In the meantime, heat a whole wheat tortilla and top with the cooked vegetables, chopped tomato, fresh spinach, a tablespoon of Parmesan cheese and the Egg Beaters. Roll into a burrito and serve with fruit salad.

Grilled Chicken Avocado Wrap

If you want a meal that is delicious, and is a great pick-me-up during the cold weather, this cannot be beat. Start with a whole wheat tortilla and add a grilled chicken breast that has been seasoned in your favorite spices and chopped into small pieces. Add a sliced avocado along with shredded lettuce, chopped tomato and low-fat ranch dressing. Serve with baked potato chips.

Chicken and Bean Tostada

Tostadas are usually made with deep fried tortillas, but the good news is tortillas crisp up wonderfully in the oven. Pop the tortilla on a nonstick cookie sheet and spray with cooking spray. Bake at 350 degrees for around 5 minutes or until golden brown. Top with fat-free refried beans, shredded chicken that has been tossed with salsa, and fat-free sour cream.

Quick Chicken Tortilla Soup

Soup isn't as hard as you might think. In fact, you can prepare this soup in a matter of minutes. In a medium sauce pot, heat 1 quart of low-sodium chicken broth along with two cups of leftover chicken chopped into bite-sized pieces. Season with garlic, parsley, fresh cracked black pepper and thyme before stirring in two cups of frozen vegetable blend. Right before serving, stir in one cup of whole wheat tortilla strips.
