Smoke Salmon on Mustard-Chive and Dill Butter Toasts

Makes 20

10 oz smoked salmon
2 sticks unsalted butter, room temperature
1 Tbsp lemon zest
3 1/2 Tbsp fresh lemon juice
1/2 C finely chopped chives or green onions
1 Tbsp fresh dill, finely chopped
1 1/2 Tbsp Dijon mustard
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 baguette, cut into 1/4-inch slices

1. Preheat oven to 375 degrees F. Place bread slices on baking sheet. Bake for 8 to 10 minutes, until golden & crispy. Let cool.
2. Mix butter, lemon juice & zest, chives, mustard, dill, salt & pepper in a bowl until well blended. Cover & refrigerate. Bring to room temperature before using.
3. Spread a thick layer of the mustard-chive butter & place a slice of smoked salmon on top of each toast. less
