Serves a crowd

2.5 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/2 tsp. ground cinnamon

3 egg whites
1 tsp. vanilla extract
2.5 cups semisweet chocolate chips

1. Preheat the oven to 350F and line baking sheet(s) with parchment paper.
2. In a large bowl with a handheld mixer, mix first 4 ingredients on low. Stir in the egg whites until the batter is well mixed, then mix in the vanilla extract and chocolate chips by hand.
3. Using a spoon, scoop batter onto the baking trays, about an inch apart. They will spread a bit.
4. Bake until cookies are cracking on the surface, about 15 minutes. Let cool for 10 minutes on baking sheets. less
