3 to 4 ripe mangoes, peeled and cut
1 lime, juiced
2 eggs
1/2 cup white sugar

Mango Ice Cream with Chili Sea Salt

Makes 1 liter

3 to 4 ripe mangoes, peeled and cut
1 lime, juiced
2 eggs
1/2 cup white sugar
1/4 cup honey
3 cups half & half cream
3 Tbsp sea salt
2 Thai red chilis

1. In a blender, puree the mangoes & lime juice until smooth.
2. In a heavy saucepan, lightly whisk together the eggs & sugar. Add the honey & 2 cups of half & half. Cook mixture over medium-low heat, stirring constantly, until it coats the back of the spoon.
3. Remove from heat & add the remaining half & half. Cool in an ice bath, then whisk in the mango puree. Cover & chill.
4. Pour custard into an ice cream maker and prepare according to the maker's instructions.
5. For the salt, blend salt & chilis in a food processor & sprinkle on each ice cream serving. less
