10 Ways to Cook with Green Beans

Green beans are among the most tender members of the legume family (which also includes shell beans, lentils, and peas). Despite their name, green beans grow in yellow and even purple varieties; while there's not much flavor difference among them, they are beautiful and can easily stand in for their green counterparts.

Green beans are an impressive source of vitamins A, C, and K, plus potassium and iron. They contain omega-3 fatty acids. Eating green beans may help boost energy levels, as well as cardiovascular and bone health.

Four Ways to Use Green Beans

Toss with creme fraiche, minced shallots, lemon juice, and chopped chives.

Saute diagonally cut green beans with butter and almonds until warmed through.

Stir-fry briefly in canola oil with garlic, ginger, scallions, and soy sauce; sprinkle with toasted sesame seeds.

Arrange on a plate with tuna, olives, boiled potatoes, sliced tomatoes, hard-boiled eggs, and anchovies. Drizzle a vinaigrette over for a classic salade nicoise.
