3 Easy Snow Day Snacks

To some people, a blizzard is an excuse to curl up and sip hot chocolate and fresh baked goodies. Sound cozy? Definitely. But to me, snow day snacks are whatever is in my house already - there's no way I'm going to the grocery store in this weather! Here are my most pantry-friendly provisions:

You have: Green tea, brown rice, canned tuna, olive oil

Make:Green tea brown rice tuna.

Bring 2 cups of water to a near boil and plop in 2 to 3 green tea bags and let steep (but not boil!) for about 2 minutes. Remove tea bags and throw in a cup of short grain brown rice. Bring to a boil, cover, and let simmer until all the water is absorbed, about 40 minutes. Meanwhile, toss a can of tuna with some olive oil, salt, pepper and a dash of vinegar. Throw in any leftover veggies. Combine with the green tea rice for a flavor-full dish!

You have: Limp leftover vegetables, dry pasta, tomato paste, canned white beans

Make
: Warm pasta salad.

Roast vegetables with olive oil and salt in a 400 degree oven until they're soft and caramelized (this will hide their less-than-fresh texture!). Boil pasta. Toss tomato paste with canned white beans and throw in any Italian-type herbs you have (basil, oregano, garlic, etc.).

You have: Ramen noodles, eggs, frozen peas

Make: Easy egg drop soup.

Boil noodle packet in water. When the noodles have softened, stir in one whole egg, which will add flavor and protein. Then, pour in a cup of frozen peas to add six grams of filling fiber and Vitamin C. To cut down on sodium, flavor with just half of the seasoning packet.
