5 Easy Ideas for Peaches
Easy and delicious ways to cook this refreshing fruit. For these recipes, use halved, pitted peaches.
1. Peach Crostata
Preheat oven to 425°F. In lg. bowl, toss 1 lb. peaches, peeled and thinly sliced, with 3 Tbsp. brown sugar, 1 Tbsp. cornstarch, ⅛ tsp. ground ginger, and pinch salt. Unroll 1 refrigerated ready-to-use pie crust (for 9-in. pie) on cookie sheet. Arrange peach mixture on crust, leaving 2-in. border; fold border over filling. Bake 25 to 30 minutes or until crust is golden. Serves 4.
2. Peachy Grilled Chicken
Prepare grill for direct grilling on medium-high. In lg. bowl, stir together ½ c. fresh mint leaves, finely chopped; 2 cloves garlic, crushed with press; 2 tsp. grated lemon peel; and ¼ tsp. each salt and pepper. Add 1 lb. peaches; toss. Transfer peaches to plate. Add 1¼ lbs. boneless, skinless chicken thighs to mint mixture; toss to coat. Grill chicken 8 to 10 minutes or until cooked through (165°F), turning over once. Grill peaches 5 minutes or until grill marks appear, turning once. Serve chicken with peaches. Serves 4.

3. . Tropical Smoothie
In blender, puree 1 lb. peaches, peeled and sliced; 1 c. frozen mango or pineapple chunks; ½ c. apple juice; and ½ c. low-fat vanilla yogurt until smooth. Serves 2.
4. Chilled Shrimp Salad
In lg. bowl, toss 2 lbs. peaches, thinly sliced, with 12 oz. precooked shrimp; 3 c. herb salad greens; 4 radishes, thinly sliced; 2 Tbsp. lime juice; ¼ tsp. salt; and ⅛ tsp. pepper until well combined. Serves 4.

5. Easy Peach Jam
Stir 1½ lbs. peaches, finely chopped, and 1½ c. sugar in 3-quart microwave-safe bowl until well mixed. Place bowl on med. microwave-safe plate. Cover bowl with vented plastic wrap. Microwave on High 24 minutes in 8-minute intervals, stirring between intervals. Stir in 2 tsp. lemon juice. Cool completely. Makes 2 c.
