Salmon and Scrambled Eggs

Even healthy breakfasts deserve to be upgraded (pancakes get enough love anyway). The dill in this recipe adds a burst of freshness without being overpowering. Served with toast, this kitchen quickie would also make a great evening meal.

1/2 pound skinless salmon fillets
6 beaten eggs
Heavy cream
Chopped dill
Toast (for serving)

1. Cut salmon fillets into large cubes, season, and saute in an oiled nonstick skillet over medium-high until opaque throughout, about 5 minutes. Reduce heat to medium; add eggs, a splash of cream, and dill. Season and cook, stirring, until eggs are just set; serve with toast.

Think about your favorite go-to meals. The ones that -- while you could make them in your sleep -- still make you feel happy, full, and utterly satisfied.

Got 'em? Now, this is just a guess, but we're going to assume that these dinners are easily remembered and simply prepared. In fact, we'll bet that being able to tick off a recipe's ingredients on the fingers of one hand is often what makes it appear so often on your dinner table. And we're right there with you. Sometimes, less really is more (especially when it means less grocery bags to carry).
