Sometimes you look in your kitchen and nothing seems to work. It was on one of those days that I accidentally came up with this pancake recipe that has become a big-time favorite in our house!

It takes less than 5 minutes to prepare and just a few minutes on the stove to cook. You can even freeze extras for later on in the week! It's so easy and delicious.

Ingredients:

  • 1 cup dry pancake mix (we use a gluten-free version but any standard mix will do)

  • 1 egg

  • 1 cup chocolate almond milk

  • 1 dash pumpkin spice seasoning

  • 1 handful chocolate chips

Directions:

Mix all the ingredients together. Scoop heaping spoonfuls onto a skillet until you get your desired pancake size. Cook in a skillet over medium heat for 2-3 minutes per side or until done all the way through. I like to use either butter or coconut oil in the skillet before adding the batter so it doesn't stick. Serve with syrup or a light sprinkling of sugar or honey.

These chocolate spice pancakes are such a hit! Everyone from our 1-1/2 year old to my picky-eater husband LOVE them. We make extra and put them in the freezer to use for last-minute breakfasts later in the week. They reheat really well and taste great!
