Serves 4-6

1 medium green cabbage, cored and thinly sliced
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1 tablespoon (heaping) grated fresh ginger
2 tablespoons butter
3/4 cup heavy cream
Salt and freshly ground black pepper to taste

1. In a very large pan, melt butter over medium heat. Add onion and garlic; cook for 5 minutes, or until softened.
2. Add ginger; cook for 1 minute. Add cabbage, stirring to coat with butter. Cook, stirring occasionally for 15-20 minutes, until cabbage has softened and caramelized.
3. Turn heat to low. Stir in cream and scrape brown bits up from the pan. Cover and cook for 10 minutes. Uncover, add salt and pepper to taste. Cook for a few minutes, stirring once or twice, to let some of the liquid evaporate. Serve. less

(And with just one head of cabbage, you can make a few of these recipes, all of which are brought to you by the spirited community of home cooks at Food52.)
