The Big Bake Theory: Make Banana, Cinnamon & Sugar Pancakes in the Oven

You can have breakfast prepped and in the oven by the time the kids wake up! This giant, fluffy pancake is made in the blender and baked in the oven for a delicious breakfast in a snap.

Ingredients:
2 tablespoons unsalted butter
3 eggs
3/4 cup milk
1/2 cup flour
1/4 cup light brown sugar
1 teaspoon vanilla
1/4 teaspoon salt
1/2 tablespoon granulated sugar
1 teaspoon cinnamon
1 banana, peeled and sliced into 1/4 inch slices
maple syrup for serving

Directions:

1.Preheat oven to 425°F. In a medium cast iron or non-stick skillet, melt butter over medium-low heat. Set aside.

2. Combine eggs, milk, flour, light brown sugar, vanilla, and salt in a blender and blend until foamy, about 1 minute.

3. In a small bowl, combine sugar and cinnamon. Pour batter into the skillet and evenly top with banana slices and cinnamon/sugar mixture. Place skillet into the oven and bake for 20 minutes until golden and puffy.

4. Slice and serve with maple syrup.
