Ingredients:
1 stick butter, softened
3/4 cup dark brown sugar
1 extra-large egg
1 teaspoon vanilla extract
1 1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup old fashioned or quick cooking oats
1 tablespoon used coffee grounds (optional)
1 cup smashed mixed salty snacks
1 cup mixed baking chips, or chopped candy bars
Directions:
1. Preheat the oven to 400 degrees.
2. In a large bowl, beat butter with brown sugar until light and fluffy. Add egg and vanilla and beat until smooth.
3. Sift in flour, baking soda and salt and beat until combined. Stir in oats, coffee grounds, salty snacks, baking chips and mix well.
4. Place spoonfuls of cookie dough a couple of inches apart on a cookie sheet. Bake for 10-13 minutes, until lightly golden brown. less
