Lucky you - life has given you lemons! Strawberries and blueberries suspended in sparkling lemonade gelatin make for a light and beautiful dessert.

Sparkling Lemonade & Mixed Berry Gelatin

Ingredients:

2.5 - 3 cups strawberries
1 cup blueberries
3 cups sparkling pink lemonade
3 envelopes unflavored gelatin
whipped cream (optional)

Directions:

1. Wash, hull and halve strawberries. Wash blueberries and pull off any stems. Arrange the berries evenly in a 6-cup gelatin mold ring.

2. In a bowl, sprinkle 3 envelopes of unflavored gelatin over 1/2 cup of sparkling pink lemonade. Let sit for 5 minutes to soften.

3. Bring 1 cup of sparkling pink lemonade to a boil. Pour the hot lemonade into the bowl of softened gelatin and stir until the gelatin is completely dissolved. Add 1.5 cups of sparkling pink lemonade and stir.

4. Carefully pour the gelatin and lemonade over the berries into the gelatin mold. Gently push berries down into the liquid. Cover and chill at least 3 hours or overnight. strawberry, blueberry and sparkling lemonade gelatin dessert

5. Unmold the gelatin ring onto a plate. Use a sharp knife to cut and serve with a side of whipped cream.
