Bethenny's Low-Cal Ranch Dressing

Ranch dressing can make just about any salad a pleasure to eat, but it's also one of the most caloric of dressings.

A great way to enjoy the ranch taste without feeling like you belong on a ranch yourself is by using this delicious recipe from Bethenny.

Bethenny's Low Calorie Ranch Dressing

Ingredients

1/2 cup low-fat milk or soymilk
1/2 cup nonfat Greek yogurt
2 tablespoons mayonnaise
1 lemon, juice and zest
1 small garlic clove, finely chopped
1/4 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons finely chopped Italian parsley or dried parsley
1 tablespoons finely chopped chives

Preparation

In a medium bowl, whisk together the milk, yogurt and mayonnaise until well combined. Next, add the lemon juice and zest, garlic, salt and pepper. Whisk well and taste for seasoning, adjusting the salt and pepper as necessary. Lastly, fold in the parsley and chives, taking care not to bruise them. Refrigerate the dressing for 30 minutes and serve over greens, or use as a dip.
