Childhood food favorites all grown up

Remember the days of PB and J, grilled cheeses, and all those comfort foods we savored so much as kids? Well, let the savoring continue. Nadia G, chef and host of the hilarious and entertaining "Bitchin' Kitchen" stopped by “The Shine” with her revamped, adult versions of some of your favorite childhood staples. Nadia whipped up some “grown up” dishes of a peanut butter & jelly sandwich, a grilled cheese, the classic hot dog, and a milkshake. All of her delectable recipes are for the taking, below!

Adult PB&J

Cashew-Peanut Butter

Ingredients

Peanut butter

·       1 cup unsalted, raw cashews

·       1 cup unsalted peanuts

·       1/2 teaspoon salt

·         3 tablespoons of canola oil

·       1 tablespoon of orange Juice

·       1 tablespoon of maple syrup

Recipe tools

·       Food processor

·       Saucepot

Directions:

Making the peanut butter: pulse all ingredients in a food processor for 2

minutes. Add more oil if creamier consistency is desired.


Spicy Blackberry Jam

Ingredients:

·       1 lb blackberries, quartered

·       1 Anaheim chili or red jalapeno, finely minced (keep seeds if you can handle the heat)

·       Zest of 1 lemon

·       1/4 cup water

·       1/4 raw sugar

Recipe tools

·       Food processor

·        Saucepot

Directions

Making the jam: in a saucepot, simmer all ingredients for 40 minutes.

Cool in fridge.

Yield: 24 servings

Cook Time: 40 minutes


Pecorino Grilled Cheese with Honey

Ingredients

·        6 oz of Grated Pecorino Cheese

·        8 slices of day old bread

·        Unsalted Butter

·        4oz honey


Directions

Making the sandwiches: generously butter the outside of each

slice. Inside the bread, add 1.5oz of grated pecorino cheese. Top with ½ oz

honey.

Close sandwich, and pan fry for 8 minutes until bread is golden and cheese has

melted, two at a time.

Yield: 4 portions

Prep Time: 5 minutes

Cook Time: 16 minutes


Spicy Italian Hot Dogs with Giardiniera Relish & Maple Dijon Mustard

Ingredients

·       1 tablespoon extra virgin olive oil

·      4 Spicy Italian Sausages

·      1/2 jar of giardiniera

·      2 tablespoons giardiniera juice from the jar

·      1/3 cup Dijon Mustard

·      1/3 cup Maple Syrup

·      1 tsp lemon juice

·       4 honey wheat or pretzel hot dog buns

Recipe tools

·        Small pot

·       Medium pan

·       Food processor

·       Small mixing bowl

·       Small whisk

Directions

Making the sausages: Heat the extra-virgin olive oil in a pan over medium

heat. Stab some holes in the sausages with a fork. Turn the heat down to

medium-low and add the sausages to the pan. Cook them for 20 minutes, turning

them every 4 minutes.

Making giardinera relish: in a small food processor or food chopper, with a

fork remove half the veggies from the jar, add two tablespoons of juice from

the jar and pulse veggies 2 or 3 times. Do not over pulse or the veggies will

just become mushy and lose their snap and texture.

Making the maple Dijon mustard: in a small mixing bowl whisk Dijon mustard,

maple syrup and lemon juice.

Remove sausage from pan, lightly toast buns on grill or in a 350 degree oven

face down for 5 minutes. Add sausage to bun, drizzle with maple Dijon mustard

and top with giardiniera relish.


Yield: 4 servings

Cook Time: 20 minutes


Strawberry Milkshake

Ingredients

·       1-2 oz Van Gogh BLUE Triple Wheat Vodka

·       1 cup milk

·       1/2 cup favorite vanilla ice cream

·       1/2 banana

·       1 teaspoon strawberry jam

·       fresh strawberries to taste

Directions

Making the milkshake: add all ingredients into a blender and blend on high.

Serve in tall glass with banana slice or strawberry garnish

Yield:  2 servings
