Crispy Business: How to Make Cool Ranch Doritos at Home

My friend Casey wrote this awesome book called Classic Snacks from Scratch: 70 Homemade Versions of Your Favorite Brand-Name Treats. As a diehard snacker I love this book. Sure, there is a certain danger in knowing how to make all of your favorite snacks at home but the book is worth the risk. When I cracked it open the other day this Doritos recipe immediately caught me eye. I mean, hello, Cool Ranch Doritos are the BEST! I set about making them, even tracking down citric acid, and was not disappointed. The good news is that the effort was just enough that I can't whip them up whenever I want - which would mean I would make at least one batch per day - but it was easy enough that I can make them when I need a treat. I look forward to more awesome snacks, especially for the beach, this summer!

Homemade Cool Ranch Doritos
adapted from Classic Snacks from Scratch

Ingredients:
Vegetable oil for frying
1 package 6-inch corn tortillas
2 tablespoons cheddar cheese powder
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon buttermilk powder
1 1/2 teaspoons dried chives
3/4 teaspoon citric acid
3/4 teaspoon dried lemon peel
1/2 teaspoon kosher salt
1/8 teaspoon Hungarian paprika

Directions:
1. Bring 2 inches of vegetable oil to 350 degrees F in an electric fryer. Slice each tortilla into 8 triangles and fry them into crispy. Place them on a sheet lined with paper towels to drain.

2. Place all the remaining ingredients in a mini food processor and grind until very fine. Then pour the mixture into a ziploc bag. Once the chips have cooled for about 10 minutes toss them in the zip lock bag in small batches and shake until they are just coated with the powder. Remove and enjoy!
