For the egg lovers out there, toss together any leftover cooked vegetables into an impressive and delicious frittata. Simply whisk together 8 eggs and 1/4 teaspoon each salt and pepper. Pour egg mixture over vegetables in a hot skillet, stir for 2 minutes, then cook for 3 to 4 minutes more over medium heat. Sprinkle 1/2 cup grated cheese over the frittata, and bake in a 350-degree oven for 15 minutes.
