A Disguised Healthy Frozen Treat for Picky Kids and Adults

I don't have children, but I cannot tell you how many times I rose to the occasion as the queen of "I won't eat that." In fact, the reason why I was so inspired to take food classes in high school and as an adult, currently writing cookbooks as we speak, was because I refused to EAT THAT. When I was in junior high, I grew excited at being able to dine out at restaurants with friends and, as a working teen doing journalism, any opportunity I had to eat out in Chicago with people much older than me. I was going to eat it, and enjoy dessert my way when I wanted it.

As the years progressed, I can no longer eat sugars carelessly. Diabetes does run in my family. As a teen, I was made aware of my sugar issues, but I always knew if I substituted carbs just right I could eat treats. I can't get away with that anymore. I am really tired of how things mess with me so one minute, I'm happy, with the following minute showcasing a cinematic crying reenactment. If you think your girlfriend has PMS, she probably has sugar problems instead. The ups and downs really make your moods swing back and forth faster than your children want to leap out of school.

I accidentally discovered a genius cheat into making people believe they are eating some frozen delicacy the other day. Someone had, for some reason I cannot understand, placed my frozen fruit cups, specifically the no sugar added kind sold for children, in the freezer. Normally, I am one who demands a huge process to make frozen desserts tasty. Not this time. I, as with everything in life, said, "Why not? I'll try it!" I opened up the little fruit cup, thawed it out as if it were ice cream for a few short moments, and took in the deliciousness I couldn't believe. My on-the-boring-side, daily, typical fruit cup had morphed into a sorbet without any work! The little fruit juice that comes with it tasted like the perfect frozen syrup; the mini chunks that fell out when I scooped it were delectable.

If you ever want to sneak a frozen dessert on your children or cranky uncle - or have a fitness or diabetic reason why you shouldn't be eating sugar - throw all your fruit cups in the freezer overnight and enjoy them the next day like you are eating tropical snow, beachside in Malibu!
