The Easiest Chicken Salad on Earth
This light and refreshing chicken salad makes for the perfect lunch on a hot summer day! Healthy grapes, apples, and almonds give a nice, bright kick to traditional chicken salad and will leave your taste buds dancing.
Ingredients:
2 cups rotisserie chicken (shredded)
1 cup red seedless grapes (halved)
1 cup green apple (cubed)
1/3 cup slivered almonds
1/2 cup reduced-fat mayonnaise
2 tablespoons fresh parsley (chopped)
1 teaspoon fresh lemon juice
salt and pepper to taste
Directions:
1. Place all ingredients in a large bowl and stir until everything is combined. Taste and add salt and pepper if needed.

2. Serve 1/2 cup of chicken salad alone or on bread or a croissant as a sandwich.
