Easy Bacon, Zucchini, and Potato Rolls

Before I share the recipe, please take a look at the finished dish.

All you need to do is the following: mix mashed potatoes with corn flavored garlic and onion fragrant salt. Put that over zucchini which you placed on top of bacon, roll everything together, sprinkle some toppings and bake!

I made these to go with beer, and I shared some with my neighbors. Amazingly, the neighbor's kid was so happy eating them even though they're spicy! His mother liked them as well and had mentioned that her kid can eat garlic and likes it too.

Come to think of it, my grandson also likes garlicky and gingery snacks a lot.

Easy Bacon, Zucchini and Potato Rolls Recipe

Yield: 4 servings (8 pcs.)

Preparation Time: 15-30 minutes

Ingredients:

- 4 Irish cobbler potatoes cut into small cubes. Rinse in water before boiling in a frying pan.

- 1 zucchini cut in half lengthwise. Use a peeler to make 8 strips and immerse in salted water to soften.

- 3 tbsp. boiled corn

- 2-3 shakes of bottled garlic and onion fragrant salt

For the toppings:

- 2 cherry tomatoes, quartered

- 4 boiled string beans, sliced diagonally into 16 slices

- 2-3 tbsp. fresh bread crumbs

- 2 egg yolks

- 1 1/2 tbsp. olive oil

- 2-3 shakes of bottled garlic and onion fragrant salt

Directions:

1. Place the boiled potatoes in a frying pan and let the moisture evaporate. Mash them with a wooden spatula until smooth, add the corn and mix. Shake the garlic and onion salt three times and mix some more.

2. Remove the excess water from the zucchini strips and place these on top of the bacon. Divide the mashed potatoes into eight portions and spread one portion on top of each zucchini.

3. For the last step, roll. Gently spear a toothpick on the side and set aside.

4. Top the rolls with cherry tomatoes and green beans as shown in the picture below.
































5. Sprinkle bread crumbs on the tops. Mix the egg yolks and the olive oil and pour equally on the rolls.

There are only five rolls in the picture because by this time, the neighbors came by and I gave them three.

6. Place a baking sheet on the tray of a toaster oven. Place the rolls on the sheet and bake for 15 minutes at 446 degrees Fahrenheit . When they've browned, they're done!
















There are a lot of new potatoes (which are in season now) and zucchini on the market, so flavoring them with garlic and onion fragrant salt is a no-fuss way of making juicy nibbles and this makes me really happy!
