We are huge fans of peanut butter and jelly in this house - my husband takes one for lunch almost every day, and the at-home brigade pounds them down, too. These granola bars put those delicious flavors together in a great snack that's sure to win fans around your house.

Ingredients

1 cup old-fashioned oats
1 1/2 Tablespoons almond meal
1/4 cup wheat flour
1/4 cup packed brown sugar
1/4 cup butter
1/2 cup creamy peanut butter
1/4 cup jam or jelly (any flavor)

Directions

1. Preheat oven to 350 degrees. Line a bread pan (5" x 10") with foil, leaving enough on the sides that you can use it like handles to remove the bars after they are cooked.

2. In a mixing bowl, stir together oats, almond meal, flour, and sugar.

3. In a small saucepan, melt the butter. In the last minute or two, add the peanut butter and stir to combine them. Pour into the dry ingredients and mix well to combine.

4. Press 3/4 of the mixture firmly into the pan, then spread the jam or jelly evenly across the top (if it's too thick, warm it slightly to make it easier to spread), and finish off by crumbling the last 1/4 of the oat mixture evenly across the top. Bake for 25-30 minutes, or until the top is browned and doesn't jiggle when you gently shake the pan.

5. Cool completely, then remove bars from pan by pulling up the sides of the tinfoil, and slicing into bars.
