Fideo is a staple in every Mexican home. Traditionally, the dish consists of small, tomatoey pasta customized by adding vegetables, ground meat or eaten plain. The bowl is so comforting, it's just like a warm hug from mom. The dish is not only delicious, but easy to prepare on a cold day or when a loved one is feeling under the weather. Enjoy!

Mexican Sopita (Fideo)

Ingredients
1 tablespoon canola oil
1/4 cup yellow onion, chopped
1 garlic clove, minced
7 ounces small dried pasta (such as alphabet soup or stars)
1 8-ounce can tomato sauce
4 cups water
1 medium Yukon potato, chopped
2 Roma tomatoes, chopped
2 chicken bouillon cubes
pinch cumin powder

Directions

1. In a large saucepan heat oil over low-medium heat.

2. Add onion and garlic and cook until onion is translucent, stirring frequently. Add dried pasta and stir, mixing well until pasta begins to brown.

3. Add tomato sauce and stir, incorporating ingredients. Continue cooking for 1 minute.

4. Add water, potatoes, tomatoes, bullion and cumin. Cover, set heat to low and let simmer for 20 minutes or until pasta and potatoes are tender. Let cool and serve in small bowls.
