Oranges and mustard are a sweet and spicy combo we love.

Using a sharp knife, remove peel and pith from 2 large oranges. Working over a medium bowl, cut out orange segments and squeeze 3 tablespoons juice from membranes. Whisk in 2 tablespoons grainy mustard and 1/4 cup extra-virgin olive oil until combined, then add 1 teaspoon chopped fresh thyme and season with salt and pepper. Toss with 8 cups of blanched kale (2 large bunches) and serve warm or at room temperature.
