Gluten-Free Pancakes: Fat Tuesday Style

Hell-oooo, Fat Tuesday.

What's the point of having a day like today if you don't celebrate a bit, right? You can imagine then, my excitement when Dan told me he would not only make me pancakes this morning, but whip 'em up Rachael Ray style -- just in time for Day 13 of the Gluten-Free with Rachael Ray Challenge.

He used this Strawberry Pancakes recipe as a base, and created his own spin on it for the cinnamon and sugar version that I was craving. Here's the gluten-free swaps he came up with:


RR's Ingredients

  • 1-1/4 cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 2 tablespoons granulated sugar

  • 2 teaspoons baking powder

  1. In a medium bowl, whisk together the flour, sugar, baking powder and salt. In a small bowl, whisk together the egg, milk and vanilla. Preheat a nonstick griddle over medium heat.

  2. Whisk the wet ingredients into the dry. Stir in the melted butter. The batter should be thick and smooth.

  3. Spoon the batter onto the griddle 1/4 cup at a time. Cook the pancakes until set and thoroughly bubbly, about 3 minutes. Flip them with a spatula and cook until golden brown, about 2 minutes more. Sprinkle cinnamon and sugar, and powdered sugar on top of pancakes, followed by maple syrup.


Call it pancake picture gluttony ... I couldn't get enough of these yummy shots.

The best part? You'd never know these pancakes are gluten-free. They have the texture and consistency of "real" pancakes, and the taste is delicious. Ooo, and the cinnamon and sugar sprinkled on top gave it the perfect sweet accent (in conjunction, of course with the powdered sugar and maple syrup)!

Is it bad that while eating this five-stack I watched this video?

The truth is, I always watch exercise videos before I actually do them. But it felt rather ironic to be shoving my face with pancakes while watching these gals work their boo-tays off.

Regardless, this looks like a great, quick workout for the lower body. I love the ballet-inspired moves. Thanks, mom, for tipping me off. (Hey, are you trying to tell me something?) ;-)

I'm still not feeling up-to-par today, but I am not sure if I can ignore the 54 degree weather we have going on here, and be good enough to stay inside and not run. It's so nice outside-uhhh! (That's me whining.) We'll see.
