Zucchini Bran Muffins
Ingredients
1 c. whole-wheat flour
1/2 c. white flour
1 c. sugar, 1 tsp baking soda, 1 tsp baking powder,
1 tsp salt
1 c. vanilla yogurt

Zucchini Bran Muffins
Ingredients
1 c. whole-wheat flour
1/2 c. white flour
1 c. sugar, 1 tsp baking soda, 1 tsp baking powder,
1 tsp salt
1 c. vanilla yogurt
1 egg
1/4 c. veg oil
1 c. grated zucchini
1 c. bran
1 c. boiling water
1/2 tsp nutmeg
Directions

1. Mix water with bran, set aside.
2. In another bowl mix flours, baking soda, baking powder and salt.
3. In another bowl whisk egg, sugar and oil. Mix in yogurt, zucchini, bran and water mixture, and nutmeg.
2. Combine flour and zucchini mixtures. Spoon into muffin cups, bake at 350 for 25 - 30 minutes.
Makes 18 - 20.
