Great Balls of Energy! Mom's Perfect On-the-Go Snack

As a new mom, it's hard to sit down and eat a decent meal.

Most of the time we are too busy taking care of the baby, the kids, and other details to make time for a nice, hearty breakfast. These no-bake energy balls have become my GO-TO snack, as they are super easy to make and perfect for my on-the-go lifestyle. Here's how you make them…

Ingredients:

1 cup oats
1/2 cup natural peanut butter
1/3 cup local honey
1/2 cup milled flax seed
1/2 cup chocolate chips
2/3 cup coconut flakes
1 tsp vanilla

Mix all of the ingredients together in a large bowl. Refrigerate mixture for an hour until cool and firm. Then, roll them into 1-inch balls! Store them in the fridge and grab a few every time you need a pick-me-up!

*Feel free to use dried berries instead of chocolate chips or coconut. You can get really creative with the ingredients!

**Do not give these to children under 1 year of age, as they contain honey.
