Hoisin-Glazed Shrimp Skewers

Ingredients

-1 seedless cucumber, sliced
-2 scallions, sliced
-2 tablespoons rice vinegar
-2 tablespoons canola oil
-kosher salt and black pepper
-1 pound peeled and deveined medium shrimp
-1/4 cup hoisin sauce
-2 teaspoons toasted sesame seeds

Directions
1. Heat broiler. In a medium bowl, combine the cucumber, scallions, vinegar, oil, and ¼ teaspoon each salt and pepper.
2. Thread shrimp onto 6-inch skewers, wrap the skewer ends with foil, and place on a broiler-proof rimmed baking sheet.
3. Broil, basting with the hoisin sauce, until opaque throughout, 2 to 3 minutes per side; sprinkle with sesame seeds. Serve with the cucumber salad.

Spaghetti With Shrimp, Feta, and Dill

Ingredients

-12 ounces spaghetti (3/4 box)
-1/4 cup plus 1 tablespoon olive oil
-1 pound peeled and deveined large shrimp
-kosher salt and black pepper
-2 tablespoons fresh lemon juice
-1 teaspoon grated lemon zest
-3/4 cup crumbled Feta
-2 tablespoons coarsely chopped fresh dill

Directions
1. Cook the pasta according to the package directions. Drain the pasta and return it to the pot.
2. Meanwhile, heat 1 tablespoon of the oil in a large skillet over medium-high heat.
3. Season the shrimp with ½ teaspoon salt and ¼ teaspoon pepper and cook, tossing occasionally, until opaque throughout, 3 to 4 minutes.
4. Stir in the lemon juice and zest. Add the shrimp, Feta, and dill, the remaining ¼ cup of oil, and ¼ teaspoon each salt and pepper and toss to combine.

Crispy Cornmeal Shrimp

Directions

1. In a bowl, whisk together ¼ cup flour, ¼ cup cornmeal, and 1 teaspoon Cajun seasoning.
2. Dip 1 pound raw peeled and deveined medium or large shrimp in 2 beaten eggs, then coat in the cornmeal mixture.
3. In a skillet, cook the shrimp in ½ inch of canola oil until golden and crisp, 2 to 3 minutes. Serve with tartar sauce.

Curried Shrimp Rolls

Ingredients

-1/4 cup mayonnaise
-1 tablespoon lemon juice
-3/4 teaspoon curry powder
-kosher salt and black pepper
-1 pound cooked, peeled, and deveined large shrimp, coarsely chopped
-2 stalks celery, sliced
-1 cup chopped arugula
-hot dog buns, toasted
-potato chips (optional)

Directions
1. In a medium bowl, whisk together the mayonnaise, lemon juice, curry powder, and ¼ teaspoon each salt and pepper.
2. Add the shrimp, celery, and arugula and toss to combine.
3. Serve on the buns with the potato chips (if desired).




Orange-Chili Shrimp Cocktail

Directions

1. Cook 1 pound raw peeled and deveined medium or large shrimp in simmering salted water until opaque, 3 to 5 minutes; let cool.
2. In a bowl, toss the shrimp, 1 sliced jalapeño, ½ small red onion (chopped), and ¼ cup roughly chopped cilantro with ¼ cup orange juice and 2 tablespoons lime juice; season with salt. Marinate for 15 minutes. Serve with chips.
