Culinary Tips

--Use metal skewers instead of bamboo! No need to soak, and they're reusable.

--Be sure to time the skewers going on to the grill if you want to pull them all off at the same time!

--Put the same ingredient on the same skewer. That way, you won't have undercooked and overcooked items at the end.

 

 

Grilled Chicken, Shrimp and Vegetable Skewers

Serves 4-6

Special Equipment: 8” metal or bamboo skewers, 4 resealable bags

Ingredients:

1 pound peeled and deveined medium shrimp with the tails on, rinsed

2 chicken breasts, cut into 2 inch pieces

1 large or 2 small zucchini , cut into 1 inch thick rounds

1 large yellow squash , cut into 1 inch thick rounds


Marinade:

½ cup vegetable oil

2 cloves minced garlic

2 tbsp. thyme, chopped

2 tbsp. oregano, chopped

1 ½ tbsp. salt

1 tsp. pepper

3 tbsp. white balsamic vinegar, or any white vinegar

2 lemons, zest and juice

Procedure:

Begin by making the marinade. In a bowl combine the oil, garlic, thyme, oregano, salt, pepper, vinegar and the zest only of the 2lemons. Mix to combine and set aside.

In a resealable bag place the shrimp. Pour ¼ of the marinade over the shrimp. Do the same with the chicken, in a separate bag. In a third resealable bag add the rest of the marinade to the zucchini and squash (about half). Refrigerate everything for 1½ hours.

If using bamboo skewers soak them in water for at least 30 minutes.

Preheat the grill to medium high heat. Clean and oil the grates.

Remove bags from refrigerator. Begin with the shrimp. Skewer 5-6 shrimp on each skewer making sure not to overcrowd. Place on a plate.Continue with the chicken on separate skewers.

For the zucchini and squash alternate them on the skewers, about 6-8 pieces per skewer. Make sure these are closer together, almost touching.

Put the zucchini skewers on the grill first, then the chicken skewers. Cook 3-4 minutes per side. Lastly, add the shrimp about 5minutes before everything is ready to take off. Cook about 2-3 minutes per sideor until charred and cooked through.

Remove skewers from grill and squeeze the lemon juice over everything. Sprinkle with salt and pepper.

Serve family style or remove everything from the skewers and serve on a platter.
