Guilt-Free Baked Vegan Doughnuts

(makes 12 doughnuts)

Dry Ingredients:

  • 1 1/2 cup all-purpose flour
  • 1/2 cup agave nectar
  • 2 tsp. baking powder
  • pinch of salt
  • dash of cinnamon
Wet Ingredients:
  • ¾ cup soy milk
  • 1 tsp apple cider vinegar
  • 1 tsp. vanilla extract
  • ¼ cup applesauce
  • ¼ cup coconut oil
Preparation:
  1. Preheat oven to 350ºF/180ºC
  2. In a mixing bowl, combine the dry ingredients
  3. In a small sauce pan over medium low heat combine the wet ingredients and mix until it starts steaming (2-3 minutes)
  4. Add the wet mixture to the dry and mix until just combined to form a soft dough
  5. Scoop dough into a nonstick doughnut pan and bake for 12 minutes. Let the doughnuts cool completely and decorate with melted chocolate
