Happy Birthday, Dr. Seuss! Celebrate by making Cat in the Hat Cake Pops!

Dr. Seuss has a birthday today, March 2nd, 2011. Theodor Geisel would have turned 107. I grew up with Dr. Seuss rhymes and riddles, learning how to read with Green Eggs and Ham and Sam I Am and my kids are too. Just yesterday my four-year-old sat on the couch reading Sam I Am's pleas to my two-year-old.

I'm sure you have a favorite Dr. Seuss book, but it's hard to deny the success of The Cat in the Hat. From spin-off series to Hollywood movies, the hat-topped cat has been filling the homes of youth since its appearance in 1957.

To celebrate Dr. Seuss's birthday in 2011, here are a few easy marshmallow pops for your own Thing 1 and Thing 2 as they run up and down on this cold, cold wet day that were inspired by Katies.

Cat in the Hat Marshmallow Pops
1/2 cup white chocolate melts
1/4 cup red candy melts
12 jumbo marshmallows
12 sticks

Line a baking sheet with parchment. Melt white chips over a double boiler. Drop spoonfuls into round puddles on the parchment and allow to set.

Melt red candy melts. Take jumbo marshmallows and dip one end into the red candy melts and up the sides about 1/4″. Place on parchment and allow to set.
