Homemade ChipWITCHES



Even witches crave ice cream. It's a proven witch fact. Satisfy your inner witch with these decadent homemade ice cream sandwiches. Instead of the ol' fashion chocolate chip cookie, we've spiced ours up with a gingersnap and two types of ice cream. When it comes to ice cream, it's go big or go home!
















Ingredients:

¾ cup salted butter, room temperature

¾ cup brown sugar

¼ cup unsulphured molasses

1 egg

½ teaspoon vanilla extract

2 cups all purpose flour

½ teaspoon baking soda

¼ teaspoon salt

1 ½ teaspoons ground cinnamon

1 teaspoon ground ginger

½ teaspoon ground cloves

¼ cup crystalized ginger, chopped

1 cup granulated white sugar

½ teaspoon coarse salt

1 pint vanilla ice cream

1 pint Ben and Jerry's Phish Food ice cream

Mini chocolate chips

Directions:

Preheat the oven to 350 degrees Fahrenheit. Cream the butter and the brown sugar together using an electric mixer until light and fluffy. Add in the molasses, egg, and vanilla and beat until well mixed.

In a separate bowl, combine the flour, baking soda, ¼ teaspoon salt, spices and crystalized ginger and stir well. Add half of the dry mixture to the wet and mix until incorporated. Add the remaining half of the dry ingredients and repeat. Once the dough is ready, refrigerate for 30 minutes.

Combine the white sugar and the coarse salt in a small bowl. Sprinkle some of the sugar and salt mixture onto your work surface. Roll the dough out to ¼ inch thickness. Use a round cookie cutter or a biscuit cutter that is 3.5" in diameter. You should be able to cut at least 12 cookies out of the dough. Sprinkle the cookies with more of the sugar and salt mixture, and bake for 12 minutes.

Once the cookies have cooled, remove the ice cream from the freezer. Use a serrated knife to cut ½ inch thick slices (cut through both the container and the ice cream!). Peel the paper away from the ice cream and cut each disc of ice cream in half. Layer one ½ slice of vanilla ice cream and ½ slice of Phish Food together to create a circle on top of a cookie. Top the ice cream with another cookie, and roll the ice cream sandwich in the chocolate chips to coat the edges.

Put the sandwiches back in the freezer to refreeze before serving.
