Homemade Pumpkin Cupcakes that Squash the Competition

Fall is finally here! That means bundling up with a warm drink and a sweet pumpkin treat! We love the smell of pumpkin to fill up our house during this time of year and, more importantly, we love any possible recipe with pumpkin. These cream cheese-covered cupcakes are the perfect ooey-gooey choice for a fall family snack or a Halloween party dessert!

Ingredients
4 eggs
1 cup white sugar
1 cup brown sugar
1 can pumpkin (15 oz., about 2 cups)
3/4 cup vegetable oil
3/4 cup olive oil
1 teaspoon vanilla extract
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon or pumpkin pie spice
1 teaspoon salt
2 cups semi-sweet chocolate chips
your favorite frosting recipe

Directions

1. In a mixing bowl, beat eggs, sugar, pumpkin and oils until smooth.

2. Combine flour, baking soda, baking powder, cinnamon and salt. Add to pumpkin mixture and mix well. Fold in chips.

3. Fill greased or paper-lined muffin cups three-fourths full.

4. Bake at 400° F for 16 to 20 minutes or until cupcakes test done.

5. Cool in pan 10 minutes before removing to a wire rack.

6. Add a heaping tablespoon of frosting to the top of each cupcake.
