It's time to drink your watermelon
Watermelon is one of the most refreshing summer bevys, but between the sticky factor and the pits it can be a pain. Here are two cool alternatives to getting your watermelon fix without the production.
EatingWell's Watermelon Agua Fresca
Ingredients:
8 cups cubed seeded watermelon, divided 1 cup water, divided 1/3 cup sugar, divided 1/4 cup fresh lime juice 1 liter club soda or seltzer water, well chilled Lime slices for garnish
Directions:
Combine half the watermelon, half the water and half the sugar in a blender; puree. Pour through a coarse strainer into a large container. Repeat with the remaining watermelon, water and sugar. Stir in lime juice. Refrigerate until well chilled, about 4 hours.
To serve, stir in club soda (or seltzer) and garnish with lime.
Yield: 10 servings
EatingWell's Watermelon Slush
Ingredients:
3 cups diced watermelon
2 tablespoons lime juice
1 tablespoon sugar
1 cup crushed ice
1/2 cup water
Directions:
Blend watermelon, lime juice, sugar, ice and water in a blender until smooth.
Yield: 4 servings
