Deviled eggs are a favorite in my family. David, my brother in law makes a classic recipe of this delicious appetizer. The tricky part of this dish is boiling the eggs to perfection and peeling them without removing any of the egg white for better presentation. The trick to boil the eggs without breaking them is to remove them from the fridge ahead of time and have them at room temperature before placing them in boiling water. Another tip to avoid breaking them is to use a spoon to put them in the water instead of just using your hands.

Last week my family had an important gathering and I told David I wanted to try my own version of this dish. I added table cream, mustard, mayo and cilantro to the egg mix and topped them with minced jalapeno. The eggs turned out delicious, full of taste and with a nice spicy kick from the jalapeno.

Ingredients


(20 deviled eggs)
4 cups water
10 white large eggs, organic
2 tbsp. mayo
1 tsp. mustard
2 tbsp. table cream
2 oz. cilantro, chopped
½ tsp. salt
6 jalapenos, minced

Directions

Boil the water in a deep pot at medium-high heat. Place each egg in the water carefully using a spoon and cook them for 15 minutes. Remove the eggs from the boiling water and rinse them with cold water. Leave the eggs in cold water and peel them carefully. Using a sharp knife cut the eggs in half and remove the cooked yolk. Place the yolks in a deep bowl and add the mayo, mustard, table cream, cilantro and salt and mix well with a fork. Fill the eggs with the mix and decorate with minced jalapeno.
