Let Them Eat Cake - You've Got S'more Pops!

There's nothing my daughter loves more than s'mores. The other day I surprised her with these treats when she came home from day camp and I thought she was about to cry tears of joy. The combination of juicy fruit covered with chocolate next to the traditional s'more flavor of chocolate, graham crackers, and marshmallows is like a burst of summer in your mouth! It's the perfect fun treat when you don't have a campfire nearby.

Ingredients
1 cup dark chocolate chips
2 graham crackers
12 bite-sized pieces of fruit such as bananas, strawberries, or peaches
12 marshmallows
12 cake pop or popsicle sticks

Directions

1. Place chocolate chips in a bowl and place in the microwave. Microwave for 30 seconds and stir. Repeat until the chocolate chips are melted, about 1 minute and 30 seconds total. Set aside until needed.

2. Place graham crackers in a plastic bag and crush with the back of a spoon or your hands until fine crumbs form. Pour the crumbs into a bowl and set aside until needed.

3. Without piercing all the way through, skewer a marshmallow onto a stick. Dip the marshmallow halfway into the melted chocolate. Lift the marshmallow out, let the excess chocolate drain, then cover the chocolate with a sprinkle of graham cracker crumbs.

4. Next, skewer the fruit on top of the marshmallow, gently pushing the marshmallow down. Dip the fruit halfway into the chocolate, let the excess chocolate drain, then cover the chocolate with a sprinkle of graham cracker crumbs.

5. Place the cake pop stick upright in a piece of craft Styrofoam. Repeat with remaining cake pops. Once finished, allow the chocolate on the fruit s'more pops to set at room temperature for 30 minutes or in the refrigerator for 10. Serve immediately.
