Two Shortbread Cookies
Ingredients:
6 tablespoons butter
½ cup powdered sugar
½ teaspoon kosher salt
¾ cup all-purpose flour
Directions:
1. Preheat the oven to 300 degrees F.
2. In a large bowl stir together the butter and sugar until smooth and creamy. Then stir in the salt and flour.
3. Roll out the dough into a rectangle of 1/8 inch thickness and cut in half. Bake for 10 -12 minutes, or until lightly golden brown. less

I had a baby a little under three months ago. So far I'm recovering from pregnancy and birth nicely, but I still need to work on trimming off the baby weight. The good news is that my willpower is strong and I recently started this new habit of small batch baking. Instead of making huge batches of treats I just bake two. That's right, 2 cookies, 2 brownies, etc. It is so much easier for me. Also, if I am doing it for my daughter, it leaves little room for negotiation.
