Mexican Atole: Get in the Holiday Mood ... Dia De Los Muertos-style!

Atole is a typical, corn-based Mexican hot drink commonly drunk during the holidays. It's the perfect drink to start off the cold season and get into the Dia De Los Muertos mood after Halloween!

(Makes 4 to 6 servings)

Ingredients
4 cups milk
3 tablespoons cornstarch
1/2 cup granulated sugar
3 tablespoons Nescafe Café de Olla Instant Coffee
2 teaspoons vanilla extract
Ground cinnamon for garnish

Directions:
Combine milk and cornstarch in a medium saucepan.
Whisk until combined.
Add sugar and coffee granules.
Cook over medium-low heat, stirring constantly, for 15 minutes or until thickened.
DO NOT LET BOIL.
Remove from heat and add the vanilla extract. Serve warm sprinkled with cinnamon.

SERVING SUGGESTIONS: This aromatic atole is delicious served with Day of the Dead Bread, Rosca de Reyes and pastries.
