White Chocolate Vanilla Bean Coconut Macaroons
Ingredients:
1 large vanilla bean
2 large egg whites
1/2 cup sugar
3 cups shredded coconut (sweetened or unsweetened)
3 ounces white chocolate, for melting
Directions:
1. Preheat your oven to 325º F. Line a large baking sheet with parchment.
2. Split the vanilla bean pod down the center with a knife. Use the dull edge of the knife to scrape out all the seeds. Add them to a large bowl along with egg whites and sugar. Whisk until blended. Stir in shredded coconut until completely coated with the egg white mixture.
3. Scoop coconut mixture onto the lined baking sheet, creating 1.5″ diameter balls. Bake for 15-20 minutes until the coconut starts to turn a golden brown on the edges. Remove from the oven and cool completely. Melt the chocolate in a double broiler. Drizzle lightly over the macaroons. less

The holidays are in full swing, and while the scents of cinnamon, cloves, and ginger are classic, nothing beats the aroma of vanilla. Sure, you can kind of replicate it with a nice candle, but it's a lot more fun (and delicious) to earn your olfactory reward by cooking something with vanilla beans. I love how versatile vanilla is -- you can add it pretty easily to lots of different recipes. Fill your house with the irresistible scent, and celebrate the season with one of these 8 tasty ways to cook with vanilla. - By Elizabeth Stark and Brian Campbell
