Make a Waffle Taco:

For the Waffles:

2 eggs
2 cups milk
1/3 cup canola or vegetable oil
2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt

In a large bowl, whisk together the eggs, milk, and oil. In a second large bowl, stir together the flour, baking powder, and salt. Stir the wet ingredients into the dry ingredients just until incorporated. You want the mixture to be lumpy. That's perfect! Spoon onto a waffle iron. Bake until golden brown and crispy. If making several waffles, place the cooked waffles on a baking sheet in an oven preheated to 200 degrees to keep them warm until ready to serve.

For Black Bean Taco Meat:


1/2 pound ground beef
1 green bell pepper
1 (15 oz.) can black beans, drained
2 tomatoes, diced
1 1/2 tablespoons chili powder
2 teaspoons cumin
1/2 teaspoon garlic salt
1/3 cup water

In a skillet, brown the ground beef until brown. Add the bell pepper and cook until softened, about 2-3 minutes. Add the black beans, tomatoes, and spices. Cook until tomatoes are softened, then add the water and allow the mixture to boil down slightly.

To Serve the Waffles:

Spoon the Black Bean Taco Meat over hot waffles. Top with your favorite taco toppings:

Diced tomatoes or your favorite salsa
Diced avocado
Chopped scallions
Chopped Cilantro
Grated Cheddar Cheese
Sour Cream
