1 can coconut milk
1/4 cup cornstarch
1 tsp coconut extract
1 tsp vanilla extract
1/2 cup sugar

Ingredients
1 can coconut milk
1/4 cup cornstarch
1 tsp coconut extract
1 tsp vanilla extract
1/2 cup sugar
1 pie crust, cooked until golden

1/2 cup dark chocolate chips, melted
whipping cream
1/4 cup toasted coconut
Directions

In a large saucepan, whisk together coconut milk, cornstarch, extracts, sugar. Heat at medium-high heat, whisking constantly, until the mixture thickens (do not boul). Set aside. Spread melted chocolate on pie crust, allow to cool. Spread coconut mixture on chocolate layer. Refrigerate until cooled. Top with whipped cream and toasted coconut, enjoy!
