Creamy Roasted Garlic Penne

Trim the top thirds of 3 heads of garlic. Set on parchment-lined foil, drizzle with olive oil, top with a few sprigs thyme, and wrap. Roast at 400° for 1 hour. Cook ¾ pound penne, reserving ¾ cup pasta water. Squeeze garlic out of skins and heat in a skillet with pasta water and ½ cup grated Pecorino Romano, whisking until thick and creamy. Stir in 2 tablespoons cream, and penne. Season, and top with greens such as watercress. Serves 4.
