Penne, White Bean Pomodoro



Beans and Pasta with Tomato Sauce ....Simply Delicious

A very easy and quick meal everyone will love, the flavors are wonderful!

3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/4 teaspoon garlic powder
2 fresh basil leaves chopped
1 teaspoon dried parsley or 1 1/2 teaspoon fresh parsley
2 lbs fresh tomatoes, peeled, seeded and put through the food processor
1/2 cup white wine
2 cups cooked white beans ( I used navy beans)
salt and pepper to taste
pinch of sugar
1/4 teaspoon cayenne or red pepper flakes
1/2 pound penne pasta cooked separately al dente
grated Romano cheese for the top

Heat the oil in a skillet or saucepan over medium-high heat. Add the garlic saute till golden brown. Remove garlic. Add all spices, salt and pepper to taste, add a dash of sugar.
Add the tomatoes, reduce heat to medium and simmer for about 10 minutes.

In the meantime boil water for penne pasta, cook till al dente, set aside.
Stir cooked beans into the sauce, salt and pepper. Simmer another 10 to 15 minutes over low heat. Add cooked pasta to the bean mixture and mix all together. Garnish with cheese. Serve with Italian bread.
Variations:

If you don't have fresh tomatoes, substitute 2 lbs of canned tomatoes. Also, use any other type of white beans of your choice.
